- Good quality sausages (2-3 per person)
- Around 350g cherry tomatoes (cooking for two)
- 1 red onion
- Balsamic vinegar
- Olive oil
Chop the red onion into chunks, peel a couple of cloves of garlic and crush with a knife. Add tomatoes, onion, garlic, about 2 teaspoons of fresh thyme, the leaves of around 5-6 rosemary strands, a few glugs of olive oil and a liberal splashing of balsamic vinegar to a baking dish and toss until all is coated. Add the sausages and toss until the sausages are also coated. Place the sausages on top of the layer of tomatoes and bake at about 180 or gas mark 4-5 for one hour, turning the sausages once halfway through.
Serve with crusty bread or mash.
